Chef Chris Castro prepares a healthy turkey burger that is moist and flavorful. His secret? Half of the turkey should be dark meat, and half should be turkey breast! (Get the ground dark turkey in a tube/packaging that says 80% lean or less, breast meat will read 90% lean or more.)
Here’s the recipe:
“The healthy choice turkey burger”
4 each Toasted, large Brioche buns
1 pound Ground turkey breast meat
1 pound Ground dark turkey meat
¼ cup Bread crumbs
1 cup Diced sweet onions
1 each Whole egg, beaten
1 tablespoon Worcestershire sauce
¼ cup Sweet red bell pepper, diced
¼ cup Fresh parsley, chopped
1 tablespoon Extra virgin olive oil
1 each Avocado. Peeled and sliced
1 each Fresh tomato, sliced
1 teaspoon Kosher salt
1 teaspoon Ground black pepper
1 each Fresh garlic clove, peeled and minced or smashed
As desired Crisp, CHILLED Bib lettuce, can substitute fresh basil leaves
As Desired Your favorite buns, toasted
Burger Preparation and presentation…
In a large size bowl add the ground white and dark turkey meat. Mix gently then add in the salt, pepper, garlic, egg bread crumbs, olive oil, sweet peppers, onions, parsley and Worcestershire sauce. GENTLY fold the ingredients together being careful not to over mix as it will make the burgers tough.
Divide into four individual balls and form into patties. Before cooking put a little dimple in the center of each patty with your finger as this will keep the burgers from swelling in the center while cooking.
Toast the buns, if desired, with butter until lightly browned and set aside.
Heat a grill to high heat. Lightly season the burgers with salt and pepper and place on the hot grill. Grill over the high heat 2 minutes on each side and then reduce the heat to medium and cook until reaching an internal temperature of 165 degrees, flipping them as necessary.
Starting with bottom of the bun, place the burger. Next top the burger with the bib lettuce, avocado and tomato slices and finish with ketchup and mustard or your favorite relish. Place the top of the bun on and enjoy!
